Sweet & Spicy Caramelized Pear Pie

I need a clever name for this one...
I purchased a huge bag of pears last week and no one is eating them, so I decided we needed to have pie with dinner tonight!

I'm seriously, eating this pie as I type.  It's hot and it's delicious.  If I can make a pie, you can make a pie!  Trust me.  I have never made a pie before today.  I'm not talking about jello pies, I'm talking about roll out your own crust and bake kind of pie.

Here's the filling recipe:

 8 -9 pears of your choice, peeled and cubed.
1/2 cup of brown sugar (I used the Splenda version)
2 tsp of olive oil
1 tsp of ground cinnamon
1 tsp of ground ginger
1/4 tsp of red pepper flakes (optional)

Preheat oven to 450 degrees.  Heat the olive in a sauce pan on medium to high heat, toss in the cubed pears.  Using a spoon or spatula, coat the pears with the oil.  Sprinkle in the sugar and spices.  Cook until pears are soft and brown about 20 minutes.

Make your pie crust according to how Martha Stewart makes hers and you can't go wrong.  I love this crust!  I love that it uses real butter too and is as flaky as she claims it will be.  The less you handle the crust the flakier it will be.  I used some cookie cutters to make fall leaves and acorns on the top of mine.  I'm sure placement of decorations is an art form but I just threw them on top and brushed the top with a little melted butter.

Bake at 450 for 15 minutes.
Reduce heat to 350 and bake for 30 more minutes.


I'm totally loving that I can make a pie!  Give it a try and let me know how delicious it is.

P.S.  Yes, I'm still on Weight Watchers and no this doesn't help but yes, I have earned it!  :)
