Purple Potato Salad


A few weeks ago my little boys and I went grocery shopping together and we NEVER do that.  For one, Mommy coupons and needs total concentration at checkout and two, I don't like walking out with things that weren't on my list.
It's just not very thrifty.

You know that Llama, Llama Mad a Momma Book?


Well, that's what I'm afraid of...that tantrum stuff kids pull.
I have to say my kids did fairly well the day they went but I did come home with a sack full of these...

Aren't they gorgeous!
So, what is a mom to do with all these tiny purple potatoes?
Potato Salad of course.
Mashed Potatoes maybe next time.


My husband wanted to know what "they" put it them to make them purple.  I think he missed the point that God makes things more beautiful than we can imagine sometimes.  My kids didn't miss the point.  They loved picking out those beautiful potatoes.  I loved cooking them and
I LOVED EATING THEM!

They do have a slightly different flavor than regular potatoes, 
more nutty and sweet.
Plus, these babies are Antioxidant Powerhouses!

I can totally relate! We actually read that book to the kiddos after one such meltdown! And the post shopping pre-checkout filtering you have to do with little ones with grabby hands does cut down on coupon concentration!! Gorgeous potatoes though!!

I am just so darn jealous that you can go grocery shopping without your kids! hahaha! With my husband working and in school (both full time), I HAVE to do it with my 3 kids!! And I have 2 with Autism Spectrum Disorders! hahahahaha! By the time I reach the checkout counter, people are either staring or pitying me. hehe! All I can do is laugh!

Anyway, thanks for the idea of purple potato salad! YUMMM! And so pretty!

Very interesting, I have never seen purple potatoes before. It makes me think of a poem that my mother always said about a "Purple Cow".

Ugh, I sympathize! I hate shopping with my 3 kids (all under 4) a 3 year old girl and 20 month old twin boys. One of my twins? I swear the "Llama Llama" books were written JUST for him! Next time I do go shopping I will look for some purple potatoes! I know my daughter would love them and purple potato salad, would be a huge hit at my house. BTW love the blog! I'm a new follower! I love to craft and sew and bake! I have a blog here on blogger too. :D
